Pancake fans will have fun preparing these bunny pancakes for Easter. The batter is simple to whip up, although using a ready-made pancake mix works just as well!

Helpful Tips:
- Check that your baking powder is still fresh. Expired baking powder can result in less fluffy pancakes.
- Rather than making the batter from scratch, you may use pancake mix. Keep the measurements the same when forming the bunny shapes.
- For the feet, banana slices and chocolate chips are suitable alternatives.
- A tail can be made with whipped cream or a banana slice instead of a marshmallow.
- This recipe works with any variety of milk, including whole, 2%, or fat-free.
- If you like, stir 1 teaspoon of vanilla into the milk mixture.
Tip for Making Pancake Shapes
To Make Circles: Try a turkey baster! Fill the baster with pancake batter and squeeze it onto the pan. This helps create a round shape.
To Make the Ears/Feet: Reach for a squeeze bottle.

What You’ll Need
- 1 cup plain flour
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup milk
- 2 tablespoons melted, cooled unsalted butter
- 1 large egg
- Oil *for coating the pan
- M&Ms in Easter-themed or pastel shades
- Big marshmallows
- Edible Grass (optional for decorating the plate). Green-tinted coconut flakes can be used as well.

How to Prepare a Bunny Pancake
1. Follow our pancake recipe below, or choose pancake mix.
2. Shape the bunny pieces from the pancake batter:
Prepare one medium round pancake.
Pour ¼ cup of batter to form the body. A turkey baster makes it easier to create a circular shape.

Then, cook a small circular pancake for the head.
Use 1½ tablespoons of pancake batter.

With a squeeze bottle, pipe 2 small triangles to create the bunny’s feet.

Next, use the squeeze bottle to form 2 small ovals for the bunny ears.

2. Put the bunny together:
Start with the small pancake, then set the larger one on the plate so that the two overlap slightly.

Slide the 2 ovals beneath the small pancake to position the bunny’s ears.

Position the 2 little triangles along the bottom of the large circle, slightly overlapping it to form the bunny feet.

Scatter a few M&Ms across the bunny’s feet.

Place a marshmallow on the tail area.
Optional: To create the tail, take a large marshmallow and gently press its top to flatten it slightly. With scissors, snip 7 slits around the entire marshmallow. This creates a fluffy white tail for the bunny’s backside. (If you prefer not to make the slits, simply slice the marshmallow in half).

Which Oil Should You Use?
- When possible, choose liquid oil instead of cooking spray. Spray oil may leave the pancakes looking blotchy.
- After adding the oil or butter, I suggest gently wiping the pan with a paper towel. This distributes the oil more evenly and eliminates thick spots that could lead to uneven cooking.
- Is butter an alternative? Yes, using butter instead of oil in the pan will result in darker pancakes.
Storage Instructions:
- Keep any leftovers refrigerated for up to three days. Warm them in the microwave in 30-second intervals before serving.
- Remaining pancake batter may be kept in an airtight container in the refrigerator for as long as three days.

- This recipe should produce 2 complete bunnies, with a small amount of pancake batter remaining. If you would like to prepare more at once, double the recipe.

Set the oven temperature to 400 degrees F and let it preheat.

In a large bowl, blend the flour, sugar, baking powder, and salt with a whisk.

In a separate small bowl, whisk the milk, cooled melted butter, and egg until combined.

Pour the wet mixture into the dry ingredients and stir until everything is incorporated. Let the batter rest for 5-10 minutes before cooking.

Warm a griddle or spacious skillet over medium-high heat for 2-3 minutes. Turn the heat down to medium, then lightly coat the surface with oil.

Pour ¼ cup of batter onto the griddle to create the bunny’s body. When bubbles appear across the surface, turn the pancake over and cook the opposite side.

For the bunny’s head, use 1 ½ tablespoons of batter to make a medium-sized circle.

Squeeze 2 small triangles from a squeeze bottle to shape the bunny’s feet.

Use the squeeze bottle to create 2 oval shapes for the bunny’s ears.

With scissors, snip several slits into the large marshmallow.

Build the bunny by placing the smaller pancake on the plate first, followed by the larger pancake with a slight overlap. Slide the 2 oval pieces beneath the small pancake to form the ears. Position the 2 little triangles along the bottom of the large circle, allowing them to overlap slightly as the feet. Scatter some M&Ms over the bunny feet. Finish by setting the marshmallow in the middle of the large pancake to represent the tail.
