Can I use any color of Jello for this recipe?
Yes, any Jello flavor will work, although the yellow cake mix in this recipe will influence the final colors. For instance, blue Jello may appear green, while purple can become somewhat gray. If you want blue or purple cookies, you may add food coloring to achieve those shades.
For the cookies shown here, we chose lemon, lime, strawberry, and orange Jello, and each of these flavors pairs nicely with the cake mix.

Can I use white cake mix and egg whites so that the dough isn’t yellow?
Yes, you can—instead, use one box of white cake mix along with 4 large egg whites, which equals 1/2 cup of egg whites. This version produces a flatter cookie, but the flavor remains delicious, and no extra food coloring or Jello powder is necessary. Purple Jello mix may still have a slightly gray appearance.

Can I use just 1 flavor of Jello for this recipe?
Yes. To make every cookie the same flavor, leave the dough undivided and mix in all the powder from a 3-ounce box of Jello.
What if I don’t want to press the cookies flat before baking?

Set the oven to 350 Fahrenehit and cover a baking sheet with parchment paper.

Place the yellow cake mix, 1/2 cup of oil, and 2 eggs into a large mixing bowl.

Stir everything together until blended—the dough should be sticky.

Distribute the dough as evenly as possible among the 4 medium-sized bowls.

Place 2 tbsp of Jello powder into each bowl of dough, using a separate flavor for every bowl.

Using a spoon, stir each portion of dough until thoroughly blended.

Use the cookie scoop to portion the dough, spacing each ball 2-3 inches apart. This allows the cookies sufficient room to spread as they bake.

With your finger or a paper towel, coat the base of a drinking glass with oil. Dip the glass bottom into a small dish of sugar, then press it onto each cookie to flatten it.
